Tasting Note: Delicate mineral nose, unripe pears and granny smith apples, and a touch of butter. Textured palate, with refreshing acidity, very long finish
Vinification Process: Two different vineyards in Maldonado, on the east coast of Uruguay: Garzón and Cerro del Toro. Both in close proximity to the Atlantic Ocean, with stony calcareous soils. 100% hand harvested, whole bunch press, and only 50% of the press juice used. Fermentation with selected yeast at low temperatures 14-16°C. Work on the lees to achieve roundness and creaminess. No malolactic. 9 months in French oak foudres (2000l)

Tasting Note: It has a beautiful vibrant apple fruit character with a marmalade and honey finish and striking acidity. It is unfiltered so can be slightly cloudy but the lees protects from oxidation.
Vinification Process: This is cofermented, winemaking involves leaving the grape skins and pips in contact with the juice for 35 days and then aging half in barrels, half in tanks for 6 months. This develops a naturally stable wine reducing the need other forms of stabilization like the use of high levels of Sulphur Dioxide. It is an ancient form of wine making which is gathering momentum around the world.

Vinification Process: Fermentation is done following ancient techniques where wines were fermented in clay pots, here it is done in clay amphora which help to retain a constant, cool temperature. The only yeast used is the natural yeasts present on the grape skins.

Vinification Process: The chardonnay is picked unripe (like champagne base wine) to give a sharp acidity, then fully ripened Gewurztraminer and finally late harvest ‘raisin-like’ Moscato is added. The wine is then fermented in the tank for 25 days at 15°C

The wine is then aged for 9 months below 0°C to ensure stabilisation and some racking is done during this period. This is followed by a light filtration before bottling in the summer

Inspired in these techniques Pablo aromatises and fortifies the base wine, that has been aged in oak barrels for several years
