Tasting Note: Tart passion fruit, pineapple skins and some floral notes, there are some hints of citrus on the palate that is unctuous but offering a savouring acidity and very well balanced
Vinification Process: The chardonnay is picked unripe (like champagne base wine) to give a sharp acidity, then fully ripened Gewurztraminer and finally late harvest ‘raisin-like’ Moscato is added. The wine is then fermented in the tank for 25 days at 15°C

Food Match: Spicy and spiced food, seafood, particularly mussels and chicken with a tropical flavoured sauce

Vinification Process: Cold macerated for 5 days at 6° C for extract the fruity flavours with a daily pump over. Fermentation is at 25 °C for 7 days with daily “delestage”. The wine is left in French oak barrels for 18 months

Vinification Process: Grapes are handpicked from sustainably farmed (soon to be certified organic) vineyards. Fermentation using indigenous yeasts over 7 days at 30-35 °C with several pump-overs. The wine is then aged for 9 months below 0°C to ensure stabilisation and some racking is done during this period. This is followed by a light filtration before bottling in the summer

Vinification Process: Made by combining two different Italian winemaking techniques, Barolo Chinato (where wine is infused with herbs) and Marsala (fortified with grape spirit). Inspired in these techniques the winemakers aromatises and fortifies the base wine, that has been aged in oak barrels for several years

It is elegant and well balanced with creamy texture and soft, lingering finish
Vinification Process: The Chardonnay is fermented for 16 days, the Pinot Noir for 19 days. 30% of the wine undergoes Malolactic fermentation, 70% is aged in oak for 3 months
